Genova, Italy part 2


Ciao Ciao from Italy again!

Jesus I am getting fat here...

Day 3 (Tuesday continued)

After work I had an appointment to go to dinner with my Italian co-workers and their families but at 19:00 since that's when the restaurants open here.

So I had some time to kill, so I bought an "Cannolo Siciliano" that I enjoyed on the deck of the hotel before I went into the Jacuzzi for half an hour.
It was fucking delicious!



After my Jacuzzi it was still 2.5 hours until dinner so I enjoyed a baguette and some Gorgonzola in my room... The Gorgonzola was a bit better than what I was used to... mmmmm!


Then we went to the restaurant for a meal of Focaccia, an Italian bred that they have a lot of typical Genovese varieties of.

Firs was fried bread: Very nice and very very fluffy and good.


Then chickpea Focaccia which was so sooo good. Probably my favourite out of everything so far...
Both with spring onion and "naturale".



And of course some pizza... Very thing crust and delicious and quite rustic. 


And then something very typical Genovese. Crispy thin Focaccia with stracciatella cheese between the layers... Wow! This cheese. Buying some with me for home!


For desert we bought some "Chocolate salami" and apricot pie. Also very good and not so sweet and quite nice to have a few that we shared.



This was tuesdays night dinner... And we where 5 adults sharing it and 1 small child. Was very nice and I got to experience a proper Italian dinner out with the families and bond with my co-workers.

And of course after the meal we had some Limoncello... :)


Day 4 (Wednesday)

Breakfast! Damn this buffet is good... Also had apricot pie for "dessert"... wow... I should really cut down on.. everything?


Dinner at work.. Of course I had to try the rissotto in Italy when I am here with Gorgonzola... hohoho yummy yummy!


And in the evening I had a sea food platter but the pictures of that are on my camera...
Shrimps, squid and some other fish with pesto and cucumber is what I had. Also got a tour by my friends around Genoa and went shopping so I bought a lot of pasta, pesto, cheese and wine to bring home... Also some candy/cookies.

Day 5 (Thursday)


Only had breakfast today so far... But I mean I ate enough for the entire day as you can see bellow...

The omelette was especially good, cheese and ham. 





And tonight 7-8 guys from here are going out to say good bye to a co-worker that is moving to Kista Sweden to work at Ericsson there so there will be a big party at a restaurant called "Maria". So they have said that the wine, beer and food will be raining and I will experience a real going out Genovese style. Quite excited about that :)

Italy Part 1

Ciao from Italy!

Finally in Italy the birthplace of so many awesome dishes! Can't wait to eat them all (or as many as I can possibly fit into this crammed week where I have to work 8 hours a day). I am only here until Friday evening unfortunately.

But! The first night my work friend Igor drove me on his vespa to some amazing spots and we tasted some wine and hors d'oeuvre. 
Then he showed me his favorite pizza place and I ordered 5 Italian cheese pizza with salami. No tomato sauce and it was probably one of the best pizzas I have ever had...


After I had some hazelnut gelato, but no picture of that now since I only have my mobile camera at the moment and the pictures from there...

Day 2 (Monday):

Breakfast the next day! Bacon, sausage, roasted potatoes, sauteed mushrooms and chocolate cake!
Also had 2 sandwiches and some yoghurt :)


Then I ate at work but was nothing special just some pasta and a pork chop. Much better than what our restaurant serves in BorĂ¥s though...


At night i found a small nice restaurant that served some real Genovese food, today when I told my friend where I went he said it was a really really good choice which I can attest too. The Pesto with pasta, beans and potatoes was awesome! And the wine they paired it with was a match made in heaven!
And the Focaccia on the side.... yummmm!
Focaccia and pesto is something they are very proud of here in Genova since it's very typical this region.



After dinner on my way back to the hotel you get this thrown in your face every 100 meters or so and my resolve weakened! But I ran for 11 km today so I guess I deserved it.. right?



So I bought an Gelato that I enjoyed on top of the hotel.. Crema and dark chocolate, jesus christ it was good. So creamy and light and full of flavour!


Day 3 (Tuesday)

Hotel breakfast again... I have trouble saying no to these things and the breakfast at this hotel is smacked full of stuff. Fruits, breads, cheeses, pancakes, yogurt, dried fruits, sausages, bacon, cakes, muffins, biscuits, croissants, salami and the list goes on...





And then when I got to work both my friends and colleagues proudly hold up bags filled with Focaccia Genovese that we eat with their morning coffee... Jesus I am full but damn it was good, the Focaccia is apparently something very typical Genovese. 


And that concludes my food diary, I left some minor interesting stuff out though :P

Saturday hangover fun!


Hello!

So today was hangover day, which means fatty greasy breakfast!

I went American style and replicated a breakfast that I recently got at Linda's place in the USA.

First I cooked some sausage meat from a raw mincemeat sausage.


I got scones from the Enlgishshop. This should really be biscuits but this was the closest thing I could find, these we where awesomely good! A bit sweeter though than biscuits but otherwise same taste and consistency. I just put them in the oven on 175c for 5-10 minutes.



After meat was cooked I added milk, flour and pepper and salt.
Let the sauce thicken.


Remove scones from oven and split them in half by just pulling the top gently off.


Add gravy on your biscuits(scones)!! and Enjoy!

They where soo sooo good! Sara was not sold though but I loved it! :D

Then we took a trip into town where we have autumn market today and yesterday. There was a lot of cheese and sausages and other food related stuff I wanted to buy but I had to still my hand since I am going to Italy tomorrow where I will be bringing stuff with me home from.

We however bought a doughnut each!
Sara went with the left one: Melted white chocolate and toffee
And I went with dark chocolate and toffee shavings.

They where still warm and fresh and delicious! Maybe even better than Krispy Kreme... or very close!


Then I made some pasta with minced meat sauce with freshly shaved parmesan reggiano and a scone at the side. Very nice!


Went for a run and then me and Sara enjoyed some of my frozen banana "ice cream" I put some coconut shavings on mine this time around and some extra peanut butter and dried dates on hers.


Tomorrow I am leaving for Italy so my posts will probably be about food I eat at restaurants for the next week. And! A lot lot lot of Gelato!!

National Pancake day

So today was National Pancake day and I can't let the Americans have all the fun! So today I surprised Sara with American pancakes for breakfast!

Also a good foundation to start your day with when you have After-Work in the afternoon :)


Used my new small pan from the US. Was perfect for the pancakes and also got to test my Organic Maple Syrup that was sooo sooo good!

Also made a few pancakes in the bottom with cocoa powder in them but I didn't use enough so the tasted the same as the normal ones. Still really really taste though!

Foody food!

Hello!

Today was training day so when I got home I made my favorite "healthy" snack before training.

1 Frozen banana
100g of Of sour milk (like onaka or a-fil, low kcal and NO SUGAR ADDED!)
1 tsp Sugar free peanut butter
1 tsp unsweetened cacao powder
10g of dried dates.
10g of vanilla extract

Toss it into the blender and voila tasty awesome snack with virtually no sugar and it tastes like ice cream! You can do alot of different variations on this adding some cocos flakes after or before, adding some raspberries or anything you like!

After my run it was time for some "real" dinner...

Tonight's dinner was banana coconut milk curry with chicken and rice! :)

So I fried some chicken in some oil and coated it in a curry I got from India that is hot as hell but also very very tasty while my rice was boiling.



Added some wok vegetables into this, would also have added some red pepper/paprika into this if I had it at home. You can add whatever vegetables you want here. Fry it!


Pour some coconut milk into a pan and add a sliced banana and bring it to a simmer so the banana dissolves.


When the banana has dissolved add the sauce to the vegetables and chicken and let it simmer for a few minutes until the rice is done. Add some more curry now if you want to! (I added some normal Swedish curry for the color)  



Then just pile the food up however you like and add some fresh vegetables if you want.


Was so delicious! Would add some fresh grounded unsalted peanuts if I had em at home just to get some peanut flavor and texture. Banana and peanuts are delicious!

Now one can of Pumpkin puree and the filling is for my friend Mille but the rest are for me!
So the scones I'm using on Saturday and making gravy and biscuits! Stay tuned for that! :D

Panko chicken with peanut sauce

OMFG!

This was sooo goood and so easy to make!

New to all of this so forgot to take pictures during the cooking process...


Boil some broccoli!

Boil some rice!

While this is boiling slice chicken thin (or however you want em).
Roll the chicken in panko and fry with a bit of oil/butter.

While this is frying and so.

Take 50g peanut butter, 4 tbsp of coconut milk, 1 tsp fish sauce, 1 small limes sauce, 1½ tsp sweet chili sauce or some other hotter sauce that doesn't have too much flavor.

Heat all the ingredients for the sauce, don't let it boil though just keep stirring on medium heat for 3-4 minutes.

Combine everything on a plate and then enjoy your awesome meal!

Grilled chicken with pumpkin oil parmesan sallad

Second post!

This time I made it easy for me.

Marinated chicken in Tobago Keys sauce.
Marinated and ready!

Put the chicken on the grill, high heat at first and then indirekt until finished.
Chopped some green and put my Slovenian Pumpkin oil all over that shit! Then grated some parmesan reggiano over the sallad.


Assembled and ready to eat! Also added some Greek yogurt and more parmesan reggiano! 

It was really really nice even though I over did it with the pumpkin oil, if there is such a thing?! Still very tasty and a quite healthy meal. 
For a more "hearty" meal with more calories I would add some cold pasta or rice or a piece of bread or something.
